Hot sauce does not belong in the fridge. Ever.

By @fayeok2 · Food

My girlfriend keeps putting our hot sauce in the fridge and it's objectively the wrong way to store it. they says she likes it cold, I say it ruins the flavor profile completely.

The full story

This is a dumb hill to die on but I'm ready. Every single vinegar-based hot sauce is shelf-stable. Putting it in the fridge makes the vinegar taste sharp and cold, which masks the actual flavor of the peppers. It's just basic food science. She thinks I'm being ridiculous, but every time I go to use it, it's ice cold and tastes like disappointment. I've started buying two of every kind—one for the pantry (mine) and one for the fridge (hers). This feels like a crazy solution.
